Light amber color with reddish reflections.
As for the smell, thyme honey deserves a separate mention. The aroma is very intense with clear phenolic components, very intense, so much so that it can generate rejection by some consumers. Because of its aroma, it is informally said to be a honey that you "love or hate".
The taste is sweet with acid notes.
This honey is not pasteurized, it is still difficult for it to crystallize since it usually has a high fructose content and little moisture.
