Dehumidifier Kaskade® for drying wet honey
The Kaskade® dehumidifier efficiently and quickly reduces the moisture content of honey to prevent it from fermenting and meet quality standards.

The honey harvested in early spring (rosemary, orange blossom), and more so if it is a rainy year, will come from more watery nectar, which will dry worse because the days are shorter, the temperatures are lower, and the relative humidity of the air is higher.
The same thing happens in some areas with late autumn blooms (strawberry trees and others), in which, sometimes, the bees can cap them in the cells with humidity of up to 20% (come to ferment in the honeycomb).
Fermentation occurs when microscopic yeasts, which are in the air, flowers… have enough moisture to thrive. This is fulfilled with more than 18% and with ambient temperatures of more than 20 °C.
To avoid this fermentation, we use this type of dehumidifier.
FUNCTIONING
Wet honey is deposited on the top honey tank. This tank contains a spiral electrical resistance that makes the honey more liquid and allows it to flow downwards, passing through the connection area between both honey tanks(the upper and the lower). Here is what we call "Honey Waterfall", as it has 6 perforated plates along with a heating lamp. In addition, the dehumidifier is connected, which dries the air in a closed circuit without coming into contact with the honey.
Since the honey runs slowly thanks to passing through these 6 barriers, it is possible to reduce the level of honey moisture. It is important that the phases of the cascade are slow. If the honey flows too fast, we recommend turning off both heating units (the upper heating element and the heating lamp of the waterfall).
Since the honey is heated at low temperature or at no temperature, it does not suffer from heat damage and the HMF is not noticeably increased.
It can dehumidify about 15 kg of honey in 30 minutes.
