It does not cut the capping: it punctures it. This is the tool for the honeys a knife will not release, not a general-purpose uncapper.
01 · WHAT IT IS ACTUALLY FOR
Some dense honeys — heather, ling, Calluna — are thixotropic: they behave like a gel and will not come out with conventional uncapping and spinning. That is where this roller earns its place, because the needles open the cell and stir the honey inside rather than merely shaving off the lid. Run it with moderate pressure and parallel to the comb face: the needles should open the capping, not crush the midrib. On very viscous combs you will need several crossed passes — the roller opens the cell, but it does not turn a honey fluid that is not.
02 · WHAT IT CANNOT REACH
Worth knowing before you buy, because it is the standard complaint from anyone using it as a general uncapper: sunken cells, the corners and the strip against the top bar stay out of the needles’ reach and have to be finished with a comb, fork or knife. And on fluid honeys with regular combs, a knife gives a more even finish in fewer passes. The choice is not a matter of taste: the texture of the honey decides it.
03 · WHAT IT SAVES YOU
Because nothing is cut, the comb stays whole and no cappings are produced. That saves you the step of draining and rendering them — and the bench time it takes — with the trade-off that you do not recover that wax either. If your capping harvest is part of the business, count it in before you change method.
04 · BEFORE YOU BUY
At the end of the day take off honey and wax without knocking or bending the needles, rinse the working part and dry the whole thing; do not leave the wooden handle soaking. And before each use spin the roller and check there are no bent or loose points, which are what tear the comb.
